Ingredients:

  • 1 cup All-Purpose Flour (Maida)
  • 1/4 cup Semolina (Sooji)
  • 1/2 cup Khoya (Mawa)
  • 1/2 cup Sugar
  • 1/4 cup Milk
  • 1/2 tsp Fennel Seeds
  • 1/4 tsp Cardamom Powder
  • Ghee for frying

Instructions:

  • Step 1: Prepare the Dough In a bowl, combine all-purpose flour, fine semolina, salt, carom seeds, and ghee. Mix well until the mixture becomes crumbly. Gradually add water and knead into a firm dough. Cover and let it rest for 15-20 minutes.
  • Step 2: Roll and Cut the DoughDivide the dough into equal portions and roll each one into a thin sheet (around 1/8 inch thick). Cut the rolled dough into desired shapes (diamond or square).
  • Step 3: Fry the NimkisHeat oil in a deep frying pan over medium heat. Fry the Nimkis in batches until they are golden and crispy. Remove and drain excess oil on paper towels.
  • Step 4: Dip and ServeAllow the fried Nimkis to cool completely. Store them in an airtight container for long-lasting freshness.
